A Gluten Free Breakfast

You’ve got people staying over who are gluten-intolerant. You’ve got no idea what to do for breakfast. Toast is out of the question, as are cornflakes and some sausages contain flour in the skins. Therefore, I’ve provided a few recipes to help you out.

Red Fruit Salad with Honey Yoghurt

You Will Need: (Serves 4)

  • 1/2 Watermelon, diced
  • 1 punnet of Strawberries, washed and halved
  • 1 punnet of Raspberries, washed
  • 1 Blood Orange, split into segments
  • Drizzle of Cranberry Juice
  • 1 large carton of Natural Yoghurt (no added sugar and check the ingredients for gluten)
  • 1 tbsp of Runny Honey
  • 4 sprigs of Mint, chopped

Method:

Slice the fruit into bitesize chunks and place in a large bowl. Drizzle with cranberry juice and chill overnight.

In the morning, place the yoghurt into a dish and pour over the honey.

Tear the mint and stir into the fruit salad. Serve with the yoghurt.

Bacon and Mushroom Omelette

You will Need: (Serves 4)

  • 6 Rashers of Streaky Bacon, sliced
  • 1/2 punnet of Button Mushrooms, quartered
  • 150g Grated Cheddar Cheese
  • 5 Eggs, beaten
  • Olive Oil

Method:

In a large frying pan, drizzle a small amount of olive oil and fry the streaky bacon in the pan on a high heat for 3 minutes or until crispy. Add in the mushrooms and stir for a minute before adding in the beaten egg.

Leave to cook for a  minute and then add in the grated cheese. Once the omelette starts to take shape (2 minutes depending on thickness), flip over and cook on the other side on a medium heat for another minute.

Gluten Free Pancakes

You Will Need: (Serves 4)

  • 4 Eggs
  • 4 tbsp Ground Almonds
  • 4 tbsp Milk
  • Butter

Mix the almonds, eggs and milk in a bowl. Fry a little butter in a non-stick frying pan and add a ladle full of the mix. Fry on both sides until brown and serve.
