Authentic Kerala Fish Masala
This authentic kerala fish masala is totally delicious and very typical of South India where the fishing ports are. You can use any white fish depending on your budget.
You Will Need: (Serves 2 Authentic Kerala Fish Masala)
- 3-4 tbsp Sunflower Oil
- 3 cloves of Garlic
- 1cm piece Ginger
- 1 Red Onion, chopped
- 1 piece White Fish, chopped
- 1/2 tsp Turmeric
- 1/2 tsp Black Pepper
- 1/2 tsp Garam Masala
- 1/2 tsp Chilli Powder (less or more depending on spice preference)
- 1/2 tsp Salt
- 1 tsp White Vinegar
- 2 Plum Tomatoes, chopped
- 1 Banana Leaf
Firstly, heat the sunflower oil in a pan. In a pestle and mortar, roughly crush together the garlic and ginger and add to pan along with onions and tomatoes. Add in the salt, turn the heat down to low and leave whilst marinating the fish.
In a bowl, add the fish, the turmeric, ground black peppercorns, garam masala, chilli powder to taste, salt and white vinegar.
Return to the pan. Turn the heat back up and push the onion mix to the side of the pan. Add a tbsp of Sunflower Oil to the pan and begin to shallow fry the fish for around 2 mins on each side.
On a gas hob, heat the non-shiny side of a banana leaf very lightly.
Once the fish is cooked, mix back in with the onions and serve on top of the banana leaf (shiny side). Roll and tie before heating the banana leaf in a pan for one minute on each side (it creates a more intense flavour).
Serve your authentic Kerala fish masala with Lime Rice.
