The Best Chilli Con Carne
I love chilli con carne and it’s a fantastic meal to make in advance and freeze. It’s gluten free, making this a dinner you just have to try. I believe that it’s the best around and I know you will agree.
You Will Need: (Makes 1 Batch of The Best Chilli Con Carne)
- 1 Pack of Mince (or quorn mince)
- 1 Chilli, sliced
- 1 Red Pepper, diced
- 1 Onion, diced
- 2 Cloves of Garlic, crushed
- 1 tsp Chilli Powder
- 1 tsp Paprika
- 1 tsp Cumin
- Beef Stock cube
- Can of Chopped Tomatoes
- Squeeze of Tomato Puree
- Squeeze of Umami Paste
- Can of Red Kidney Beans
Begin by frying the mince (no oil) in a large saucepan (follow quorn instructions).
Cook until browned and add the chilli, pepper, onion, garlic and continue to stir until the onions are softened.
Throw in the chilli powder, paprika and cumin and cook for a further 2 mins.
Add in the beef stock cube and canned tomatoes.
Continue stirring before adding the tomato puree and umami paste.
Continue to stir and then add 300ml boiling water. Drain and rinse the kidney beans and then add to the chilli. Bring to the boil and simmer for 10 mins.
Leave to cool and freeze, or serve with rice and grated cheese.
