The Best Gluten Free Brownie
Ok. You can say that I’m blowing my own trumpet here, but this gluten free brownie is honestly the best thing to come out of MAZWO HQ since records began. I can guarantee that none will go to waste – it has been known for a whole quarter of it to be eaten for breakfast before now…
You Will Need: (Serves 16 Mini Pieces of The Best Gluten Free Brownie [if you share, that is!])
- 100g Unsalted Butter
- 175g Caster Sugar
- 75g Light Brown Sugar
- 125g Dark Chocolate
- A drizzle of Syrup
- 2 Eggs
- 1 tsp Vanilla Essence
- 100g Gluten Free Plain Flour
- 2 tbsp Cocoa Powder (Make sure it’s Gluten Free)
Preheat the oven to 160*C and prepare a 20 x 20 tin with baking parchment.
In a saucepan, melt the first five ingredients on a low heat.
Whilst this is melting, whisk together the eggs until they’re light and airy.
Once the chocolate mix has melted, pour this into the whisked eggs and fold in. Sieve in your flour and cocoa powder and add the vanilla essence, before folding well.
Bake in the oven for 25-30 mins.
Serve ‘The Best Gluten Free Brownie’ with ice cream and fresh fruit.
Optional: Around Christmas, I push the boat out and add a couple of shots of my favourite liquor. Good ones are amaretto, Grand Marnier. Cointreau and Fruit Liquors.
