The Best Lentil Curry
Lentils are one of those things that people either love or aren’t so sure about. Although they can be a little mushy, they are the third best provider of protein that there is, as well as high levels of iron too. I recommend this recipe to people who ‘aren’t so sure’ and get them to try something a little different.
You Will Need: (Serves 5 The Best Lentil Curry)
- 1 Onion, sliced
- 3 Cloves of Garlic, crushed
- 1 Carrot, diced
- 3 Potatoes, diced
- Olive Oil
- 1 tsp Cumin
- 1 tsp Turmeric
- 1 tsp Curry Powder
- 225g Red Lentils
- 1.5 pints Gluten-Free Vegetable Stock
- 1 tbsp Tomato Puree
- 1 Bag of Spinach
Method:
First of all, fry together the onion, garlic, carrot and potatoes until the onions are soft and beginning to brown.
Next, add in the spices and fry for another couple of minutes.
Stir in the lentils, vegetable stock and puree and cook for 20 mins.
Once the potatoes are cooked, throw in the spinach and cover with a lid. Leave for 3 mins, before stirring and serving.
You can serve The Best Lentil Curry with rice, or just on its own.
