Aubergines are a brilliant baby food as, once cooked, they are super soft. The only thing you need to be aware of is the skins which can be tough, but you can remove them before serving.
You Will Need: (Serves 2 Children Braised Aubergine)
- Olive Oil
- 1 Onion, chopped finely
- 1 clove of Garlic, crushed
- 1 Aubergine, cut in chunks
- 1/2 Butternut Squash, diced
- 1 Tea Cup of Peas
- 1 Tin of Tomato
First of all, heat up a drizzle of olive oil in a pan and gently fry the onion, garlic, aubergine and squash. Once sizzling, turn down the heat and remain cooking.
Boil the peas so they are cooked and add to the pan after the aubergine mix has been cooking for 20mins, until soft. Mix in the tomato as well before allowing to cool and serve.
