A brilliant solution to those rushed early mornings or when you don’t know what to give them for a lunchtime snack. They are also great for those who always seem to be rushed in the morning. They are vegan and gluten free.
You Will Need: (Makes 1 Loaf of Breakfast Bars)
- 75g Gluten Free Oats
- 125g Gluten Free Flour
- 125g Brown Sugar
- 1/2 tsp Cinnamon
- 5tbsp Sunflower Seeds
- 4tbsp Shredded Coconut
- 4tbsp Dried Cranberries/Raisins
- 1tbsp Flax Seed
- 125ml Rapeseed Oil
- Cranberry Juice
Heat the oven to 170*C. Oil a baking tin before combining all dry ingredients.
Stir in the oil and around 3tbsp Cranberry juice or more depending on the mix. It should be damp but not soggy.
Press down the mix into the baking tin and bake for 35mins.
You can vary what dried fruit or nuts that you use as well. I like hazelnuts or walnuts in mine with some chopped up dried apricot.
