Bruschetta
A Mediterranean starter of bruschetta is great for vegan and vegetarian guests. It also can be made into a canape by just cutting the bread into smaller pieces and handing round on a tray to your guests. It’s full of flavour and also vitamins, tomatoes being a great food for when you’re going in the sun.
You Will Need: (Makes 4 Servings of Bruschetta)
- 4 thick slices of Ciabatta Bread
- 2 Cloves of Garlic
- 1 Large Tomato, deseeded and chopped
- 2 Large Red Peppers (those from a jar are better)
- 3-4 Sundried Tomatoes
- Salt
- Basil
Method:
The first thing to do is slice and toast the bread. Once it’s crispy, rub the peeled garlic clove onto the slices for a huge kick of garlic flavour.
Now, to make the topping, mix the sliced pepper, tomato, a pinch of salt, sliced sundried tomatoes and the rest of the rubbed garlic, chopped, in a bowl using a small drizzle of the oil from the sundried tomatoes to mix.
Place on top of the bread and serve with a sprinkle of black pepper and a basil leaf.
