Butternut Squash Filo Pie
Filo pastry is a fantastic vegan pastry and can be filled with any veg of your choice. It can be bought ready made from most supermarkets and is the ultimate weekend treat for when you’e more time on your hands.
You Will Need: (Serves 4 Butternut Squash Filo Pie)
- 1 Butternut squash, peeled and in chunks
- 1 Onion, sliced
- 2 Cloves of Garlic, crushed
- 1 Bag of Kale
- 2 handfuls of Pine Nuts (Optional)
- 4 Sheets of Filo Pastry
- Olive Oil
- Black Pepper
Heat oven to 220*C.
In an oven proof dish, place sliced onions, crushed garlic and butternut squash and drizzle with olive oil. Cook for 25 mins in the oven.
In a pan, boil the kale in boiling water for 3 mins, before draining and squeezing out all extra liquid.
Place the kale over the butternut squash and sprinkle over the pine nuts, if using.
Scrunch up the pastry into a ball shape and then back to its’ normal shape, then place over the pie mix and brush with oil.
Bake your Butternut Squash Filo Pie for 15 mins.
Optional: You could use any veg, such as spinach, broccoli, asparagus, courgette, and non-vegans can use feta cheese instead.
