Cauliflower Cheese
There is so much prejudice about cauliflower, and I’m not sure why. It’s in season right now and is a really good alternative to the generic broccoli or other veg which are overused in cooking today. This take on cauli-cheese makes a good supper or a fast lunch.
You Will Need: (Serves 2 Cauliflower Cheese)
- 1/2 head of Cauliflower, broken into large florets
- 20g Butter
- 20g Plain Flour
- 200ml Milk, semi-skimmed
- 75g Cheddar Cheese, plus extra on top
- 4 Button Mushrooms, sliced
- Small handful of Walnuts, roughly chopped
Method:
Preheat oven to 190*C.
Start by placing your cauliflower in a tray.
In a pan, melt the butter and flour before adding in the milk. Bring to the boil gently.
Stir in your cheese and whisk for 1 min.
Pour your cheese sauce over the cauliflower and throw on the mushrooms and walnuts.
Grate a little more cheese on top and bake for 30 mins.
