It’s Victorian week on The Great British Bake Off and so I thought I’d share with you my recipe for Coconut creams. A soft biscuit with a vanilla cream on top, they are great as an after dinner sweet treat.
You Will Need:
- 100g Butter
- 170g Desiccated Coconut
- 170g Caster Sugar
- 3 Eggs
- 150ml Double Cream
- 1 tsp Vanilla Extract
Preheat oven to 180*C and line a round cake tin.
Cream together the butter and sugar in a large bowl.
Beat in the eggs before sieving in the flour.
Beat the mixture until light and fluffy before adding the coconut.
Pour the mix into the cake tin and bake for 25 mins.
Lift out of the tin and leave to cool.
When cold, using a cookie cutter, cut circular biscuits.
Whip up the cream until it is stiff and flavour with the vanilla.
Add this cream to the biscuit and sprinkle with extra coconut.
