Coconut Prawns

If any of you are a little unsure of coconut, I beg of you to try this dish. It’s so easy to make and can be served as a special Friday night dinner or just as a quick midweek meal.

You Will Need: (Serves 2 Coconut Prawns)

  • Sunflower Oil
  • 1 Onion, chopped
  • 2 cm Ginger
  • 4 cloves of Garlic
  • Around 2 tbsp Chopped Coconut (Available in most supermarkets)
  • ½ tsp Turmeric
  • 2 tsp Black Pepper, finely ground
  • 1 tbsp White Vinegar
  • Handful of Prawns, around 10
  • ½ tsp Chilli Powder
  • Large pinch of Curry Leaves
  • 1 Tomato, chopped
  • Coriander, to serve

Method:

First of all, heat 3 tbsp sunflower oil in a pan. Grind together the garlic and ginger in a pestle and mortar. Begin by frying the onions, then add the ginger and garlic. Fry for a minute and then add the coconut. Stir round the pan and add the turmeric and black pepper. Fry for a couple of minutes then sprinkle over the white vinegar. Add the prawns and chilli powder, followed by the chilli leaves. Cook for around 3 minutes until the prawns are cooked and add the chopped tomato. Serve with coriander.
