Courgettie Spaghetti in Tomato Sauce
Courgettie Spaghetti in Tomato Sauce is a healthy alternative to calorific wheat pasta, whilst being gluten-free and vegan as well.
You Will Need: (Serves 2 Courgettie Spaghetti in Tomato Sauce)
- 4 Medium Courgettes
- A little salt
- 1 can of Chopped Tomatoes/Passata
- A little Sugar
- 1 Onion, diced
- 3 Cloves of Garlic, crushed
- Optional: 1 Red Chilli, chopped finely
Begin by peeling the courgette and cutting off the ends. Slice thinly using either a mandolin, a potato peeler or a spiralizer. Sprinkle with salt and set in a colander to drain.
Fry the chopped onion in a little oil, then add garlic and chilli. Add the tomatoes, a tiny pinch of sugar and simmer.
Squeeze all of the moisture out of the courgettes before boiling for 2 mins.
Strain the courgette and mix into the tomato sauce.
