As a child, the whole idea of Eton Mess repulsed me, partly because I thought it was eaten mess which conjured up images of someone chewing strawberries and meringue and then spitting it out again. Fortunately, I was wrong about this, and I’ve grown up to love it, despite meringues not being my favourite thing in the world. This is my take on the english classic.
You Will Need: (Serves 6 Eton Mess)
- 1 Pack of British Strawberries, halved
- 1 Pack of Blueberries
- 3tbsp Raspberry Seedless Jam
- 4 Leaves of Mint, torn
- 300ml Double Cream
- 6 Meringue Nests, crushed
- 1 Chilli, deseeded and chopped finely
Whip the cream to form soft peaks before folding in the raspberry jam.
Fold in the fruit, mint, chilli and meringue and leave in the fridge for a couple of hours to cool.
Serve with extra summer fruits scattered over the top.
