Gluten Free Minestrone

Soup is a great lunch or light dinner for children as it’s filling and easy to eat…generally! I’ve used gluten-free penne, but you can use spaghetti chopped into small pieces as well.

You Will Need: (Gluten Free Minestrone)

  • 1 Large Onion, diced finely
  • 2 Stalks of Celery, diced
  • 1 Large Carrot, diced
  • 1 Cup of Peas
  • 1 tsp Dried Oregano
  • 1 Tin of Tomatoes
  • 1 Gluten Free Vegetable Stock Cube
  • 50g Gluten Free Penne Pasta, cooked and chopped small
  • Olive Oil

Method:

First of all, heat up a drizzle of olive oil in a pan. Fry the onions until translucent. Add in the celery, carrot, peas and oregano and fry gently for another 2-3 mins, before adding in your tin of tomatoes. Make up 1.5 pints of Gluten Free Vegetable Stock and simmer for 10mins. Add in the pasta 1 min before serving.
