Gluten Free & Sugar Free Banana Bread
This banana bread could possibly be called a health food to be honest. It’s gluten free, contains no refined sugar and contains chia seeds. It’s totally delicious, especially if you have a few over-ripe bananas to use up!
You Will Need: (Makes 1 Loaf of Gluten Free & Sugar Free Banana Bread)
- 125g Gluten Free Self Raising Flour
- 2 tsp Cinnamon
- 1 tbsp Chia Seeds
- 3 Over-ripe Bananas
- 2 tsp Vanilla Extracts
- 1 tbsp Milk
- 1 Egg
- 1 tsp Butter
Preheat the oven to 180*C.
Begin by lining a loaf tin. You can buy loaf-tin liners from most supermarkets, and it makes your cake look very professional!
Mix the gluten free flour, cinnamon and chia seeds in a large bowl.
In a medium bowl, mash the bananas with a fork, and then add the vanilla, milk, egg and butter and mix thoroughly.
Mix together the two mixtures until combined, and then put into your lined loaf tin.
Bake in the oven for around 35 mins.
