Gluten Free and Vegan Pasta Primavera
This Gluten Free and Vegan Pasta primavera is packed full of vegetables and vitamins and is a brilliant main course as it is so easy to cook. You can add any of your favourite vegetables or mushrooms, but for this particular one, I’ve chosen green vegetables.
You Will Need: (Serves 2 Pasta Primavera)
- 120g Gluten Free Spaghetti or Tagliatelle
- 6 stalks of Broccoli
- 4 Asparagus Stalks
- 1/2 cup of Frozen Peas
- 1 Clove of Garlic
- 1 large Lemon
- Olive Oil
- Black Pepper
Method:
The first thing to do is get the pasta cooking. Bring a pan of salted water to the boil and add the pasta. After a couple of minutes, add the asparagus and broccoli. then a couple of minutes later, the peas. The pasta should have been cooking for 11 mins, before you strain it.
Return the pasta and veg to the pan and add the juice from the lemon, a drizzle of extra virgin olive oil and lashings of black pepper.
And there you have your gluten free and vegan pasta primavera!
