Guacamole has become a staple of many vegan and gluten free diets as avocados are high in good fats and filling. Their nutritional value is huge and this guacamole goes great with the vegan fajita recipe too.
You Will Need: (Makes 1 Serving of Guacamole)
- 1 Ripe Avocado
- 5 Cherry Tomatoes, sliced finely
- 1 Red Chilli, sliced
- 1 Lemon, juiced and zested
Scoop out the middle of your avocado and place in a bowl.
Mix in the tomatoes, chilli and lemon zest before squeezing over the juice.
