Super Healthy Broth with Cajun Cod
This super healthy broth with cajun cod is excellent for when you’re feeling a bit under the weather. It’s tasty and very good for you, plus gluten free!
You Will Need: (Serves 2 Super Healthy Broth with Cajun Cod)
- 1 Pack of Rice Noodles
- 1 Onion, sliced
- 1 Pepper, sliced
- 2 Small Chillies, diced
- 4 Cloves of Garlic, crushed
- 1 Pak Choi
- 1/2 Pack of Beansprouts
- 1tsp Gluten-free Bouillon in 400ml of water
- 3cm piece of ginger, diced
- 2 Fillets of line-caught Cod (or any white fish of your choice)
- 1 tbsp Cajun
- Olive Oil
Begin by marinating the cod. Rub a little olive oil over the fish and sprinkle with the cajun.
Heat a little oil in a large frying pan, then fry the onion and pepper until soft.
Stir in the garlic, chilli, ginger, beansprouts and pak choi. Fry for another couple of minutes, then add the 400ml of stock.
Heat a griddle pan on a high heat until smoking. Cook the cod for around 2 mins on each side.
Add the rice noodles to your broth and simmer for another couple of minutes.
Serve your broth in a bowl with the cod placed on top.
