Kiddie’s Fish Pie
This gluten-free fish pie is a really nice thing to make for the kids when you have a bit more time on your hands, such as at the weekend or in the holidays. You can also make it the day before and then just heat it up when you need it.
You Will Need: (Serves 6 Kiddie’s Fish Pie)
- 1 Onion, chopped
- 2 Cloves of Garlic, crushed
- Can of Chopped Tomatoes
- 350g skinless, boneless fish (such as haddock, or a frozen fish selection)
- 2 Pieces of Salmon, skinned
- Tub of Half Fat Creme Fraiche
- 500g Potatoes, mashed
- 100g Cheddar, grated
- Olive Oil
Preheat the oven to 190*C.
Heat a drizzle of olive oil in a saucepan and fry the onion and garlic together until soft. Stir in the tin of tomatoes and reduce to a simmer for 10mins.
Place this sauce into the bottom of an oven proof dish and top with the fish, chopped into chunks.
In a large pan, mash the potatoes with the cheese and creme fraiche. Dollop on top of the fish, making sure it’s completely covered.
Top with a little extra grated cheddar, if desired, and bake for 45mins.
Serve your Kiddie’s Fish Pie with vegetables.
(To freeze, place the assembled pie in the freezer. From frozen, bake in the oven at 190*C for around an hour.)
Optional: You can also add vegetables to the pie, such as frozen peas. Just add them into the tomato sauce.)
