Kid’s Pirate Ship Potato Skins
You can’t go far wrong with a baked potato, especially for a gluten-free child. They’re filling and can be mixed with whatever takes your child’s fancy.
You Will Need: (Makes 6 Kid’s Pirate Ship Potato Skins)
- 3 Potatoes
- Filling of your choice (Tuna, Ham [chopped small], Bacon [cooked and crumbled small], Coronation Chicken, Chilli Con Carne, feta, goat’s cheese) (Vegan options: Roasted red pepper, GF baked beans, spring onion)
- Grated Cheese (Vegan cheese for vegans!)
You need to bake the potatoes. Begin by washing them under the tap and pricking with a fork. You can either place them in a hot oven for an hour or in a dual-microwave for 12 mins. Pierce the potatoes with a skewer to make sure they’re fully cooked (they must be soft and fluffy inside).
Once cooked, half the potatoes and scoop the insides into a large bowl. Mix the filling with the ingredient of your choice before scooping it back into the skins. Top with grated cheese and grill for 5 mins until bubbling.
