This authentic rice dish is delicious, and can either be served with curry or on its own. It adds refreshment alongside spicy dishes, but is something a bit different to have instead of pilau or boiled rice.
You Will Need: (Serves 2 Lime Rice)
- 2 tbsp Sunflower Oil
- 1 tsp Mustard Seeds
- 1/2 Red Onion, chopped
- Large pinch of Curry Leaves
- Small handful Cashew Nuts, chopped
- Small handful of Raisins (optional)
- 1/4 tsp Turmeric
- Pre-cooked boiled rice for 2
- 1 Lime
To make the lime rice, begin by heating the sunflower oil in a pan. Add in the mustard seeds and wait until they begin to pop and ‘dance’ around the pan. Add the chopped onions and continue to fry until soft. Throw in the curry leaves, raisins and cashew nuts and stir. Sprinkle over the turmeric (don’t use too much – it’s simply just for colour) and stir for one minute until onions are coated. Add in the boiled rice to heat up, before squeezing in the juice of the lime and adding a little zest and a couple of segments for extra flavour. Add 1/4 tsp salt for flavour and taste.
Serve your Lime Rice as a lunchtime dish or with curry.
