Mango and Thai Basil Salad
A great salad for a lunch or a summer starter. Mangoes are so readily available and such a delicious fruit, it’s a shame that we don’t eat them every day. A mango and thai basil salad is full of flavour and a really easy, raw dish to make.
You Will Need: (Serves 2 Mango and Thai Basil Salad)
- A small handful of Brazil Nuts, soaked in water and chopped
- A drizzle of Honey
- Himalayan Pink Salt
- A pinch of Ground Chilli Powder
- 2 Mangoes, 1 peeled and sliced thinly
- 1 small Chilli
- 1/2 a Lime, juiced
- Small handful of Thai Basil Leaves, sliced finely
Mix the brazil nuts and honey with chilli powder and pinch of Himalayan pink salt.
Blend the flesh of one of the mangoes with the chilli and lime juice. Leave aside.
Mix together in a bowl the other mango, brazil nuts, and the thai basil leaves. Serve on a plate before drizzling over the blended mango sauce.
