This roast chicken recipe can be made the day before and then put in the oven when you get home from work for a tasty dinner. Serve with salad, crusty bread or rice.
You Will Need: (Serves 4 Mediterranean Chicken)
- 1 Large Chicken
- 3 tbsp Olive Oil
- 1 sprig of Rosemary
- 1 tsp Cayenne Pepper
- 1 tsp Cumin Seeds
- 1 tsp Paprika
- 1 Lemon
- 1 Red Pepper, sliced
- 1 bulb of Garlic, halved
- 1 Onion, peeled and quartered
Begin by placing the chicken in a roasting tin.
In a pestle and mortar, mix together the oil, rosemary, cayenne, cumin and paprika and set to one side.
Prick the lemon with a fork and place inside the cavity of the chicken.
Scatter the vegetables and garlic in the roasting tin.
Rub the oil mix on the chicken and spread over the vegetables too.
Generously season with salt and pepper.
When ready to cook, preheat the oven to 180*C. Cook for around an hour and a half to two hours.
