Mini Vegans Noodle Dish
I loved eating noodles as a child because, like spaghetti, they’re fun to slurp up. This dish is packed full of vegetables and is a favourite with mums and dads too. The only thing that takes time is the preparation, so get all your veg ready and then once the kids are hungry, just throw it into the wok.
You Will Need: (Serves 2 Mini Vegans Noodle Dish)
- Sesame Oil
- 1 Pack of Rice Noodles
- 1 Carrot, peeled and shredded
- 1 Onion, sliced
- 4 Mushrooms, sliced
- 1/2 Pepper, sliced
- 1/2 Pak Choi, sliced
- A handful of Broccoli, chopped in chunks
- 2 Cloves of Garlic, crushed
- Soy Sauce
- Chinese Five Spice seasoning
Once the veg is all prepared, heat a wok on a high heat until it’s smoking. Drizzle in some sesame oil and leave to sizzle. First, throw in the onion, carrot and peppers and stir until the onions are beginning to brown. Shake in a teaspoon of chinese five spice and continue to cook.
Now add the mushrooms and pak choi, as well as the broccoli and garlic. Continue to cook until the pak choi is wilting. Break up the rice noodles and add into the pan. Cook for a further 4 minutes, before drizzling over some soy sauce.
Serve your mini vegans noodle dish with rice,if desired, or just on it’s own.
Optional: Use any vegetable that you wish. I like spinach and spring onions in mine, as well as a little grated ginger, but it depends on your child’s tastes.
