Piri Piri Chicken Salad with Mint Dressing
This Piri Piri Chicken Salad with Mint Dressing is most probably the best salad in the world. It’s got spice, crunch, and vitamins in it, and is a fab lunch, or even dinner, to have on these barmy summer days.
You Will Need: (Serves 2 Piri Piri Chicken Salad with Mint Dressing)
- 2 Chicken Breasts, diced
- 1 Clove of Garlic, crushed
- 2 tsp Paprika
- 1 bag of Salad Leaves, Washed
- 1 Buffalo Tomato, chopped into large chunks
- 1 Small Pot of 0% Fat Natural Yoghurt
- 2 sprigs of Fresh Mint, chopped finely
- Olive Oil
- Black Pepper
To begin, make the piri piri chicken. In a large, sealable bag, place 1 tbsp olive oil, the paprika and the chicken, close the bag and shake. The spicy oil should cover the chicken. If not, add a little more oil.
Heat a frying pan and add the chicken and garlic. Fry the chicken until browned on all sides and set to one side.
In a large bowl, place the salad leaves, yoghurt and mint leaves and mix all together, covering the leaves. Add the buffalo tomatoes and lots of black pepper.
Serve your piri piri chicken with the salad and minty dressing
