Polenta Chicken Nuggets

This gluten free version of chicken nuggets is always good for kids at parties or as a weekend snack. They’re healthy and taste even crispier than breadcrumbed chicken.

You Will Need: (Serves 4 Polenta Chicken Nuggets)

  • 100g Gluten Free Polenta
  • 2 Eggs, beaten
  • 4 Chicken Breasts, sliced into chunks

Method:

Preheat the oven to 200*C.

Onto a plate place the polenta, and place the beaten egg into a dish.

Start by dipping the chicken chunks in the egg then rolling in the polenta.

Place onto a baking tray and cook for 15 mins until golden brown.

Optional: You can use tofu for vegetarians, and try adding spices such as paprika to the polenta as well.
