Polenta with Crispy Kale
This polenta with crispy kale is a brilliant meal by itself, but can also be served as a side dish.
You Will Need: (Serves 4 Polenta with Crispy Kale)
- 175g Quick Cook Polenta
- 4 tbsp Mascarpone
- 1 Bag of Spinach
- 4 large handfuls of Curly Kale
Cook the polenta according to packet instructions. In a large frying pan, heat a little oil and fry the kale until crispy. Sprinkle over a pinch of salt and pinch of sugar and mix well.
To the polenta, stir in the mascarpone and spinach. Leave for a couple of minutes before serving your polenta with crispykale sprinkled on top.
