Radish, Apple and Walnut Salad

Radishes are in season at the moment, so make the most of their crunchy spiciness.

You Will Need: (Serves 4 Radish, Apple and Walnut Salad)

  • 1 Small Pack of Radishes
  • 2 Eating Apples
  • 1 Bag of Spinach, washed
  • Small Handful of Walnuts
  • 3 tbsp Olive Oil
  • 2 Lemons, juiced
  • 2 tbsp Balsamic Vinegar
  • Black Pepper

Method:

Begin by thinly slicing the radishes. Then chop the apples into chunks and squeeze over some lemon juice (this will prevent the apple turning brown) before chopping the walnuts into halves.

In a large salad bowl, mix the olive oil, lemon juice and balsamic vinegar. Throw in your salad ingredients and mix all together just before you’re about to serve.
