Raw Carrot Spaghetti

Raw carrot spaghetti is one of the best raw main courses out there as it is so easy to make and pleases even non-raw foodies too.

You Will Need: (Serves 2 Raw Carrot Spaghetti)

  • 2 Large Carrots, spiralized
  • 1 tbsp Almond Butter
  • 1 tbsp Apple Cider Vinegar
  • 1 Garlic, crushed
  • 1/2 tsp Cayenne Powder
  • 2 tbsp Water
  • 1/2 bag of Spinach
  • Small handful of Chives, chopped

Method:

In a bowl, mix together the almond butter, vinegar, garlic, cayenne and water and mix into a paste. It should be of a sauce consistency, so add more water to taste. Into the bowl, add the carrot and spinach and leave in the fridge for 1/2 an hour to an hour to chill.

Serve your spinach and carrot with the sauce drizzled on top and with the chives to decorate.
