Raw Celeriac and Apple Soup
This is definitely a recipe for when the autumn begins to draw in, but it’s still a fresh tasting and delicious raw celeriac and apple soup which cannot be resisted. Celeriac comes from the celery family, so adds a certain, subtle spice to the soup.
You Will Need: (Serves 2 Raw Celeriac and Apple Soup)
- 1 Celeriac, chopped
- 1 Apple, chopped
- A Handful of Macadamia Nuts, soaked in water for a couple of hours
- 250ml Water
- 1 tbsp Coconut Butter
- 3 tbsp Extra Virgin Olive Oil
- 1/2 Lemon, juiced
Blend together the celeriac and apple until smooth, before adding the nuts, water, coconut butter, olive oil and lemon juice. The soup may need straining as the macadamia nuts can leave small lumps in the soup, but it’s up to personal taste.
