Raw Chocolate Mousse
This tasty raw chocolate mousse is vegan, and also contains a rather bizarre ingredient, although you can’t taste it when you eat it. It’s so much easier to make than a normal mousse, with no continuous whisking of egg whites and cream, and is so quick and easy, you can eat it all the time!
You Will Need: (Makes 4 Raw Chocolate Mousse)
- 1 Large Avocado, halved and stone removed
- 1 Banana
- 3 tbsp Coconut Oil
- 4 tbsp Raw Cacoa Powder
- 2 tsp Vanilla Extract
- 1/2 tsp Salt
Optional: I like to add a little sprinkle of cinnamon powder for an extra kick
Scoop out the flesh of the avocado and add to a food processor, a long with the other ingredients. Blitz together until smooth and mousse-like.
Spoon the Raw Chocolate Mousse mix into ramekins and leave to chill for at least an hour.
It should keep well for a couple of days, but be warned that the avocado will cause it to become harder and less mousse-like over time.
I like to serve mine with some chopped strawberry on top and a basil leaf for decoration.
