Roast Chicken Broth
This soup is the perfect thing to make with your roast left overs. It’s got loads of veg in it, making it full of goodness, and for vegetarian or vegan eaters, just leave out the chicken.
You Will Need: (Roast Chicken Broth)
- Left over roast chicken (however much is left), diced small
- All veg you have left over (peas, cabbage, broccoli, carrots, celery) chopped up very small
- 1 Gluten Free Vegetable Stock Cube
- Use any other left over veg you have!
Place all of the veg in a pan with 1 litre of stock. Bring to the boil before lowering the heat. Add in the left over chicken and heat for 5 mins to warm through before serving. You can whizz this through a food processor for small babies and children, but older kids will be fine with it left like this.
