Spicy Sausage Rice
This spicy sausage rice dish was made simply from the things we had in the cupboard and needed to use up. It’s really tasty and great if you like a bit of spice.
You Will Need: (Serves 2 Spicy Sausage Rice)
- 4 Gluten Free Sausages
- 1 tsp Cajun Spice
- 1 tsp Five Spice
- 1/2 bag Spinach, washed
- 1 tin of Tomatoes
- 120g Rice
- 1 Clove of Garlic, crushed
- 1 Chilli, sliced
The first thing to do is cook the sausage. Fry them in a pan (no oil needed) and turn until brown on the outside.
Add a sprinkling of both cajun and five spice to the pan on top of the sausages and keep frying for another couple of minutes. Add the garlic and chilli and keep stirring quickly to stop it from sticking. Add the tin of tomatoes and simmer.
Add your rice to a pan of boiling, salted water. Time this for 12 mins, or until the rice is soft and not crunchy.
When the rice has cooked, add the spinach to the tomato and sausage mix and place a lid on top, allowing it to wilt.
Mix the rice in with the sausage and serve.
