Stuffed Butternut Squash
I know it’s July, but it’s feeling pretty autumnal at the moment, so I thought I’d share my Stuffed Butternut Squash recipe with spinach and cheese. Enjoy!
You Will Need: (Serves 2 Stuffed Butternut Squash)
- 1 Butternut Squash, halved and de-seeded
- Olive Oil
- 1 Bag of Spinach, wilted
- 1 Onion, chopped
- 4 Cloves of Garlic, crushed
- 2 Beef Tomatoes, diced
- 2 Handfuls of Cheddar Cheese, grated
- Optional: You could also add some fried, crispy bacon bits.
Begin by preheating the oven to 180*C. Drizzle a little olive oil over the squash and bake in the oven for around 40 mins until soft.
Once baked, scoop out the inside of the squash and place into a bowl.
In a pan, heat a little olive oil (or fry the bacon if using). Fry the onions, tomatoes and garlic, before adding the spinach.
Mix your spinach with the butternut squash and then place the filling back into the butternut skins.
Cover with the grated cheese and bake for a further 10 mins until golden brown.
