Stuffed Butternut Squash
Butternut squash is such a classic flavour. It has the sweetness of a root vegetable, but is so versatile. This Stuffed Butternut Squash recipe is brilliant for a mid-week meal and is an interesting take on loaded potato skins.
You Will Need: (Serves 2 Stuffed Butternut Squash)
- 1 Large Butternut Squash
- 1/2 Bag of Spinach
- 1 Red Onion
- 4 Cloves of Garlic
- 1 Red Pepper
- 100g Feta Cheese, or Goat’s Cheese
Method:
Split the butternut squash in half and scoop out the seeds. Lightly prick the flesh with a knife, drizzle with olive oil and bake in the oven for 40 mins at 200*C.
Once cooked, gently scoop out the flesh and place in a bowl. Mix together with the spinach and cheese.
Fry the onion, garlic and pepper until soft, and add this to the spinach mixture.
Put the mix back into the skins and bake for a further 10 mins.
