The Ultimate Free-From Cake

The Ultimate Free-From Cake

I think it’s fair to say I got a little bit overexcited when I found out that this week’s Great British Bake Off was all about free-from ingredients. Who doesn’t like a gluten-free, dairy-free cake? Here’s my very delicious free-from chocolate cake.

You Will Need: 

  • Sunflower Oil, to grease
  • 1 large Avocado, peeled and stone removed.
  • 300g Light Muscovado Sugar
  • 350g Gluten-Free Plain Flour, sieved
  • 50g Cocoa Powder
  • 1 tsp Bicarbonate of Soda
  • 400ml Unsweetened Soya Milk
  • 150ml Vegetable Oil
  • 2 tsp Vanilla Extract

Method:

Preheat the oven to 160*C.

Grease two cake tins with the oil and parchment paper.

Into a mixer, add the sugar and avocado, and mix together until a smooth texture.

Add all the other ingredients and mix well.

Transfer your mix into the baking tins and place in the oven. Bake for around 30 mins.

 

Optional: Frosting 

You Will Need:

  • 50g Margarine, melted
  • 45g Cocoa Powder
  • 75ml Soya Milk
  • 2 tsp Vanilla Extract
  • 450g Icing Sugar
  • 50g 70% Dark Chocolate, grated

Method:

Mix together the margarine and cocoa powder until combined.

Add the soya milk and vanilla extract and continue to mix until smooth.

Gradually mix in the sugar until fully combined.

Place onto your cake and then grate over some dark chocolate.

Leave to set, preferably in the fridge, for around 1 hour before serving.
