Vegan ‘Bacon’ Sandwich
This vegan ‘bacon’ sandwich is the ultimate breakfast on a sunday before a long day ahead or as part of a lie in. It goes great with ketchup and HP sauce and ensures that you don’t feel left out when everyone around you is eating their fry-up!
You Will Need: (Makes 1 Vegan ‘Bacon’ Sandwich)
- 5 Button Mushrooms, sliced
- 2 Slices of Artisan Brown Bread
- Olive Oil
- Black Pepper
Fry the mushrooms gently in the oil in the pan. Add a small splash of water to the pan and quickly cover with a lid and cook for a further couple of minutes.
Toast the bread and choose which sauces you want on your vegan ‘bacon’ sandwich and place the mushrooms on top.
This can also be done with a large field mushroom – just fry on each side for a couple of minutes.
