Vegan BBQ Food

Vegans worry about the risk of cross-contamination at a BBQ, so therefore ensure that your vegan BBQ food gets cooked first and that the grill is thoroughly cleaned too.

These recipes are really tasty, and can also be cooked inside and under the grill.

Vegetable Skewers: (Makes 4)

  • 2 Red Peppers, cubed thickly
  • 8 Button Mushrooms
  • 1 Courgette, sliced
  • 1 Aubergine, diced
  • 1 Onion, diced in large pieces
  • 1 Jar of Tikka Paste (we use Patak’s)

Method:

Place a slice of pepper onto a skewer, followed by a mushroom, followed by a slice of courgette and aubergine and an onion onto a skewer. Do this 8 times onto 8 different skewers.

Mix a tablespoon of tikka paste with a couple of splashes of water and brush this on to the veg.

Grill for around 4 mins on each side, or until veg is cooked and not too charred (it depends on the heat of the BBQ).

 

Grilled Greens: 

Drizzle some olive oil over broccoli and asparagus and grill for a couple of mins on each side.

 

Spicy Hummus:

Blitz together chickpeas, a tsp of paprika, the juice of half a lemon, 2 tbsp of tahini and a couple of jalapeno peppers, adding a little olive oil and the jalepeno juice from the jar. Blitz until smooth and serve with a little more paprika sprinkled on top.

 

Grilled Aubergine:

Slice an aubergine and drizzle with olive oil. BBQ for around 6 mins on each side.

The same can be done with large tomatoes, field mushrooms, corn on the cob and courgette
