Vegan Chocolate Oreo Cake

My best friend made this vegan chocolate oreo cake for my birthday last year and OMG! It’s amazing! I’ve never had something quite so delicious in all my life, and I much prefer it to ‘normal’ cake. If you’re not cooking it for a vegan, you can just use butter in place of margarine and cow’s milk instead of soya milk and it works just the same.

You will need: (Serves 9 Vegan Chocolate Oreo Cake)

  • 160g Plain Flour
  • 200g Brown Sugar
  • 40g Unsweetened Cocoa Powder
  • 1 tsp Baking Soda
  • 1/2 tsp Salt
  • 250ml Warm Water
  • 1 tsp Vanilla Extract
  • 80 ml Vegetable Oil
  • 1tsp Apple Cider Vinegar

For the glaze:

  • 100g Brown Sugar
  • 4 tbsp Margarine
  • 2 tbsp Soya Milk
  • 2 tbsp Cocoa Powder
  • 2 tsp Vanilla Extract
  • 9 ‘Oreo’ Biscuits

Method:

First you need to preheat the oven to 170*C.

Mix the flour, sugar, cocoa, baking powder and salt, making sure it’s well mixed together.

Now add the water, vanilla and vinegar to the mix and stir again.

Place into an 8 x 8 tin and bake for around 30 mins until a skewer comes out clean.

To make the glaze, mix all the glaze ingredients (except the Oreos) together in a bowl. Once the cake has cooled, pour on top and spread with a spatula. Place the Oreos on top and leave to set.
