Vegan Roast Potatoes

These vegan roast potatoes, which have been cooked in oil instead of dripping or lard, are a lot crispier and tastier. Vegetarians and vegans alike can eat them, and they really are superb.

You Will Need: (Serves 6 Vegan Roast Potatoes)

  • 8 Large Potatoes
  • Olive Oil

Method:

Chop the potatoes into eighths. Boil for 15 mins, then drain and return to the pan.

Place the lid on top and shake the potatoes around gently (this creates a really crispy roast tatty!)

Put the potatoes into a large baking tray and drizzle over some olive olive.

Place in the oven for around 45 mins at 180*C.
