Vegan and Gluten Free Pancakes
These vegan and gluten free pancakes are an adaption from Gwyneth Paltrow’s recipe and taste great. They’re really easy to make and can be made with either rice or soya milk.
You Will Need: (Makes 12 Vegan and Gluten Free Pancakes)
- 300ml Rice or Soya Milk
- 1/2 Lemon, juiced
- 1 tbsp Vegetable Oil
- 1 tbsp Maple Syrup
- 65g Buckwheat Flour
- 65g Rice Flour
- 1tsp Baking Powder
Mix all the wet ingredients together in a bowl and mix all dry ingredients in another larger bowl.
Add the wet mixture to the dry mixture, carefully mixing to avoid lumps.
Heat a large, non-stick frying pan with a little oil in it, but not too much. Ladle the pancake mix on to the pan and cook for around 90 seconds on one side, before flipping over and cooking for a further 60 seconds on the other.
Serve with fruit and syrup.
