Vegetable Fried Rice

I was never a big fan of fried rice until I came to Asia, but here there is so much variety of flavours and spices which can really liven up any left over rice. If you’re like me and frequently cook too much rice, then this is the recipe for you. Feel free to throw in any other leftover vegetables too.

You Will Need: (Serves 2 Vegetable Fried Rice)

  • 140g Brown Rice, cooked
  • 2 tbsp Vegetable Oil
  • 4 Spring Onions, chopped
  • 3 Cloves of Garlic, chopped
  • 1 Chilli, chopped
  • 1/4 Cabbage, sliced
  • 1 Carrot, peeled and chopped
  • 4 Stalks of Broccoli
  • 1 Stick of Celery, chopped
  • Small handful Cashew Nuts
  • Small Handful of Peanuts
  • 50g Raisins
  • 1 Lime, juiced

Method:

Begin by heating the oil in a pan. Get the oil hot, and then add all of the vegetables. Fry on a medium heat for around 5-6 minutes until they are browning around the edges.

Fry a little longer, and then add the rice. Continue to fry for another 5 minutes, making sure the rice is cooked through thoroughly, and then stir in the nuts and raisins.

Serve and squeeze over the lime juice for an extra hit of freshness.

 

(Non Vegans could also serve this with an omelette)
