These vegetable samosas are a great vegetarian starter before a vegetable curry and are so tasty you will have people begging for the recipe. They also make a good snack for a picnic.
You Will Need: (Makes 12 Vegetable Samosas)
- 1 pack of Filo pastry
- 50g Butter, melted
- 2 large Potatoes, peeled, quartered and boiled for 20 mins, in cubes
- 1 Onion, chopped
- 1 tsp Turmeric
- 2 tsp Garam Masala
- 1tsp Black Mustard Seeds
- 4 Garlic Cloves, crushed
- 1 Chilli, finely chopped
- 100g Frozen Peas
- 10 Curry Leaves, finely chopped
- Black Pepper
Having boiled and cubed the potatoes, fry the onion, garlic, garam masala, mustard seeds and turmeric until the onions have softened.
Stir in the garlic, chilli, curry leaves and potato and after 10 mins.
Add the peas and black pepper and cook for another 3 mins.
With the filo pastry sheets, layer 3 sheets on top of each other. Cut into 6 squares. Repeat these another three times so that you end up with 24, fairly large squares. Place a small teaspoon of filling in the middle of the square, then fold the corners over each other to make a triangle shape, covering the filling.
Brush with butter, making sure the pastry is sealed and squeezed together.
Preheat the oven to 200*C and place the parcels on a baking tray. Bake for around 15 mins.
Serve your vegetable samosas with salad and a mayonnaise mixed with chilli sauce.
