Vegetable Gambian Domoda
Vegetable Gambian Domoda is a recipe close to my heart. I first had on a school trip to the Gambia where we were fed it by the local parents at the school we were renovating, and I have long since tried to recreate it in the same fantastic manner that we were served it. Here’s my best shot at the recipe.
You will need: (Vegetable Gambian Domoda serves 2-3 people)
- 225g Smooth Peanut Butter
- 400g Chopped Tomatoes
- Small Can of Passata
- 2 Large Onions, diced
- 4 Cloves Garlic, crushed
- 1 Red Pepper, diced
- 2 Sweet Potatoes, cut into chunks
- 3 Carrots, cut into thirds
- 1 Large Butternut Squash, peeled and in small chunks
- 2 Red Chillies
Method:
To make your Vegetable Gambian Domoda, begin by mixing the peanut butter in a bowl with three cups of hot water. Stir together to dilute the peanut butter.
Fry the onions with a little oil in a saucepan, then add the pepper and garlic.
Add the pessata and chopped tomatoes and bring to the boil, then add the peanut butter mix. Add the chilli and vegetables and bring to the boil.
Reduce to a simmer and cook for 40 mins.
Leave to cool then place in the fridge – it always tastes better the next day!
