Most people will have heard of the Spanish ‘cold soup’ called gazpacho and this take on it is full of raw goodness and interesting flavours and textures. Watermelon Gazpacho is spicy yet sweet and well worth a try.
You Will Need: (Serves 2 Watermelon Gazpacho)
- 1 Watermelon, 3/4 blended, the rest chopped in chunks
- 1 large Tomato, diced
- 1/4 Cucumber, diced
- 1 Lime, juiced
- 1 Chilli, diced
- 1/2 Onion, diced
Combine the watermelon puree with with the rest of the ingredients and chill. Serve your watermelon gazpacho with a sprinkle of black pepper and a basil leaf.
